That's funny I actually just sautéed my beet tops last night doing a Joshua McFadden beet salad.

A big fan of roasted beets of any color from the fridge on my salads with feta and some nuts. Had no desire for the canned variety my Home Ec mom decided we needed in our meal rotation growing up, but cold roasted beets have opened my eyes for many years now.

My farmers at the markets have been telling me to treat the greens like any others but I have always just chunked them for the rabbits. Will be rethinking this process now too! Thanks

So great that this was a today's post. My husband is recovering from serious throat surgery. The first thing he wants me to make when he gets home? Beet green broth and pureed greens! I'm ready!
