My secret to eating more vegetables is to dress them up with something that makes them feel filling, a little fatty, and a touch more sinful: olive oil, avocado, tahini, or my favorite: nuts and seeds. These supporting players make a plate of vegetables much more satisfying.

We keep a pantry full of nuts and seeds to deploy across all manner of dishes, most of them sourced from Nuts.com (see below). Follow my quick and stupid/simple tip to beef up your pantry with these crunchy little morsels. Add them to veggie dishes, atop eggs, folded into pancake batter, or tossed into pasta for an added crunch.
