Hello, friends - and happy Saturday.
We had friends for dinner last night, and like usual, I didn’t think about dessert until the last moment.
For something simple, I threw together a plate of medjool dates (my favorite) and little jagged chunks of Parmigiano. It was delicious, and we ended up stuffing the cheese into the dates after removing the pit.
You could do this with any cheese, but I love the hint of caramel you get with a great Parm. For a little extra touch, drizzle some honey over the cheese, or top it with a great aged balsamic.
For dates, you can buy them at most groceries, but if you want the best you can find, check out Rancho Meladuco Date Farm.
Never thought of parm, but I have pitted the dates, put in a small smidge of coconut oil, a sliver of dark chocolate and an almond. Riff on a Mounds bar.
